Whole Grain Banana Bread

What's better than a nice, warm, homemade loaf of banana bread? A whole grain one! And this one is kid-approved!

This is whole grain bread as we are using two different grains, wheat and oatmeal. Do not use the instant oatmeal packets.

Make sure you use a yogurt that is free of junk. I use Dannon All-Natural Plain yogurt. Be sure and read that label! You will be surprised to find out what is in your yogurt.

You can also add some chopped nuts to the batter to add a yummy health boost. Walnuts are full of healthy Omega Fatty acids!

Whole Grain Banana Bread

         Makes one loaf

  • 3 medium, ripe bananas, mashed
  • 1/4 cup plain yogurt
  • 1 cup quick-cook oatmeal
  • 1/4 cup brown sugar
  • 1 tsp vanilla
  • 2 eggs
  • 1/4 tsp salt
  • 3/4 tsp baking soda
  • 1/3 cup oil
  • 2 Tbsp ground flax seed (optional)
  • dash of nutmeg (optional)
  • 1 tsp cinnamon (optional)
  • 1 cup whole wheat flour
  1. Preheat the oven to 350 degrees F. Grease your loaf pan.
  2. Mix the bananas, yogurt and oatmeal in a bowl. Let sit for about 15 minutes. This gives the oatmeal time to plump up and keep the bread moist and makes it less noticeable in your final product (great if you have a little one that is not big on the oatmeal).
  3. Add everything else except the flour and mix well.
  4. Add in the flour and stir just until it is all moistened. There may be a little streak or two of dry flour, that's okay. Just be sure not to over mix.
  5. Pour batter into prepared pan and use a spatula to kind of push it into the corners and even it out.
  6. Bake for 40-50 minutes or until a toothpick in the center comes out clean.
  7. Cool in pan for 10 minutes. Remove and cool on a wire rack at least until its easy to handle.
  8. Best eaten warm with butter. Mmmmmmm.......
